Space is sexy in a town where it’s at a premium, and the spanking new Zuma has space to spare. The restaurant in all its lofty grandeur is spread over one floor with an enviable wrap-around terrace, while the Cinderella staircase sweeps you up to the expansive bar area on the next floor — roomy enough for casual dinners ensconced in leather chairs on the wooden people-watching deck, or to dance the night away. Serving modern Japanese food by Chef Dan Segall that’s as delicious as it is fresh, Zuma Hong Kong does her sister restaurant in London proud. The Dynamite Spider roll with soft-shell crab and wasabi is an explosion of flavours, and the signature Rubabu cocktail — a rhubarb-infused ozeki sake shaken with 42 below vodka and fresh passion fruit — is so tasty your date will forget they’re alcoholic.
