BLACK PERIGORD TRUFFLE MENU @ BRASSERIE ON THE EIGHTH
Truffle lovers are in for a special meal featuring the highly sought-after black Périgord truffles at Brasserie on the Eighth, Conrad Hong Kong, from 5 August to 4 September, 2013.
Among the many species of "Black Diamond," black Périgord truffle is the most prized by gourmands and world class chefs. Distinguished by its irregular globular shape, purplish black flesh marbled with fine white veins, subtle and mixed odour of tree roots and wet earth; Périgord truffle enhances the aroma of every dish that uses it.
Highlights include 'homemade farmer's bread topped with rich and buttery poached bone marrow and adorned with finely shaved black Périgord truffle and a sprinkle of Fleur de Sel.' Try also 'homemade egg noodles escoffier style with sautéed goose liver and shaved black truffle,' where the freshly made fettuccine is cooked to al dente and perfectly combined with the aroma of black Périgord truffle to please every taste bud.
